Abstract

This study examines the challenges faced by food-sector micro, small, and medium enterprises (MSMEs) in Medan Marelan District in managing financial records, inventory, costs, and profitability. The study aims to analyze the effects of financial record keeping and inventory control on profitability, with cost efficiency serving as an intervening variable. The main contribution of this study lies in incorporating cost efficiency as a mediating mechanism, thereby extending previous research that predominantly examined these relationships separately. An explanatory quantitative research design was employed, involving 150 owners or managers of food-sector MSMEs selected through purposive sampling. Primary data were collected using a five-point Likert-scale questionnaire and analyzed using Partial Least Squares Structural Equation Modeling (PLS-SEM). The results indicate that financial record keeping and inventory control have positive and significant effects on both cost efficiency and profitability. Furthermore, cost efficiency has a positive and significant effect on profitability and partially mediates the relationships between financial record keeping, inventory control, and profitability. These findings indicate that accurate financial information and effective inventory management can reduce waste, control operational costs, and improve resource utilization. The study concludes that integrated financial recording, inventory control, and cost efficiency are important for improving profitability and supporting the sustainability of food-sector MSMEs.
